🥟 Homemade Dumplings (Potstickers)

🥣 Ingredients

Filling

  • 1 lb ground pork (or chicken)
  • 1 cup napa cabbage (finely chopped)
  • 2 green onions (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Wrappers

  • 30–40 dumpling wrappers (store-bought or homemade)

Cooking

  • 2 tbsp oil
  • 1/2 cup water

🔄 Instructions

1. Prep the Filling

  • Finely chop cabbage and squeeze out excess water
  • Mix with pork, green onions, garlic, ginger, soy sauce, sesame oil, vinegar, salt, and pepper
  • Stir until well combined

2. Fill the Dumplings

  • Place 1 wrapper in your hand
  • Add ~1 tbsp filling in the center
  • Dip your finger in water and wet the edges
  • Fold in half and pinch to seal (pleat if you want that classic look)

3. Cook (Potsticker Style)

  1. Heat oil in a nonstick pan over medium heat
  2. Place dumplings flat-side down
  3. Cook 2–3 minutes until bottoms are golden
  4. Add water and cover immediately
  5. Steam for 5–6 minutes
  6. Remove lid and cook another 1–2 minutes to crisp bottoms again

🥢 Dipping Sauce

  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Chili oil (optional)

💡 Tips

  • Don’t overfill or they’ll burst
  • Keep wrappers covered so they don’t dry out
  • Freeze extras on a tray, then store in a bag (cook from frozen—just add a little more steam time)

🔄 Variations

  • 🐔 Chicken dumplings: swap pork for ground chicken
  • 🌱 Veggie: cabbage, mushrooms, carrots, tofu
  • 🌶️ Spicy: add chili paste to the filling
  • 🍤 Shrimp: mix chopped shrimp with pork or use alone
